Copycat Starbucks Iced Caramel Macchietto

We’ve had a glorious few days of sunshine in the Pacific Northwest that have been beyond words fabulous.  The sunshine and warmth make everything better and I’ve thoroughly enjoyed our moment of summer weather that allows for work on the patio and long walks that leave my face warm and sun-kissed.  The sunshine also makes me long for the simple joys of summer – including the return of iced coffees.  I’m a big fan of Starbuck’s iced caramel macchiato.  While it is undeniably best enjoyed as an occasional treat, the layers of milky sweetness and bitter coffee contrast one another beautifully and when they mingle with the chunks of sweet caramel syrup is a decadent indulgence that embodies summer.  It’s also incredibly easy to make this drink for yourself, which makes it even more dangerous.  All you need is 1-2 tablespoons syrup (I used vanilla), 1 cup of milk (any kind will work but I used almond milk), 1 cup of ice, 1-2 shots of espresso (we use the Nespresso machine), and caramel sauce for drizzling.  You simply layer the ingredients in the cup in the order listed but you can also watch the video below to see how it’s done.  Enjoy!!
