Crockpot Meatballs

While I don’t much care for meatloaf (or meat, in general, some days), strangely enough, I’m a major fangirl of meatballs. Meatballs via the crockpot are a beautiful thing. This recipe couldn’t be easier as we start with pre-made meatballs from Costco – it comes together in under five minutes. By allowing the pre-fab meatballs to gently simmer for a few hours in a sweet and spicy sauce that becomes luscious and rich, you can’t even tell the whole she-bang wasn’t homemade. Whether they’re being severed over rice and with a side salad for a delicious weeknight dinner or set out with a bin of toothpicks as a party snack, these crockpot meatballs are going to be a hit – guaranteed.

Crockpot Meatballs:
1/2 bag Kirkland frozen meatballs
12 oz grape jelly
1 jar chili sauce
2 Tbs brown sugar
juice from 1/2 lemon 

Mix all ingredients in crockpot and set to high for 3-4 hours or low for 6-8.
