Surprise Ingredient Smoothie

I bet you’ll never guess what makes this smoothie so rich, creamy, and delicious but it’s Monday – I want you to have all the good feelings we can find so I’ll give you three guesses.  Ready!? GO! 
It’s CAULIFLOWER.  Trust me, I thought it was beyond crazy as well when I saw the recipe in the new Tone It Up Bikini Series but I decided to give it a go and this smoothie has quickly become my go-to for breakfast, lunch, and snack time.  It’s mouthwateringly delicious – full of sweet blueberry flavors melded with the creamy-ness of the cauliflower and topped off with ribbons of peanut butter running through.  MMM!  Please let me know if you try it and if you end up loving it as much as I do!  
Berry Cauliflower Smoothie

  1. 1 cup unsweetened almond milk
  2. 1 scoop vanilla protein powder (I like the Vega plant based one at Costco)
  3. 1⁄2 cup frozen cauliflower rice or chunks
  4. 1⁄2 Tbsp peanut butter
  5. 1⁄2 cup blueberries
  6. 1 Tbsp ground chia seeds
  7. 1 Tbsp maple syrup (optional)
  1. Blend all ingredients until smooth!
